A quick and easy recipe with Thai flavours but without the heat. This is a family friendly recipe.

Ingredients

For the paste
For the Salmon
For the curry
Garnish

Instructions

To prepare the paste
  1. Add all the ingredients into a blender or food process and blitz into a smooth paste.
To prepare the salmon
  1. Mix together the seasonings to create a spice mix.
  2. Thoroughly coat the salmon.
For the curry
  1. Add the paste into a frying pan or wok and fry for a few minutes until it thickens slightly and releases its aromas.
  2. Add in the coconut cream and bone broth.
  3. Let it simmer for a couple of minutes and add in the liquid aminos, fish sauce and sweetener.
  4. Place the salmon into the curry, cover with a lid and let it simmer for 15 minutes.
  5. Garnish your curry and serve wit cauliflower or jasmine rice.

Notes

Replacements you can use:

  • Ginger instead of galangal
  • Lime zest instead of lime leaves
  • Soy sauce instead of liquid aminos
  • Coconut sugar instead of sweetener
  • Any protein instead of the salmon
