Lentil Wrap

Whether you're looking for a nutritious and delicious lunch option or simply seeking a wholesome meal, this Lentil Pancake Wrap is a must-try. Satisfy your cravings guilt-free with this innovative take on the classic wrap.

Instructions

  1. Using a ratio of 1:2, leave the lentils to soak overnight
  2. Rinse out the old water and replace with new water.
  3. Add the water, lentils and seasoning to a blender and blitz until a smooth batter has formed.
  4. Heat a frying pan and add some butter or oil.
  5. Add a ladle of batter and evenly spread it around the pan.
  6. Let it cook for 2-3 minutes. It will no longer look wet and will be easier to flip. Allow it to brown a little if you would like a crispy wrap.
  7. Flip it over and let the other side cook.
  8. Remove from the stop and add your favourite fillings.

Notes

You can use any lentils for this recipe. I used a mix of red, yellow and green lentils. The nutritional information will change depending on the the lentils used. The ratio for the batter is 1:2 for lentils to water.
