Charred leeks with a Green Tahini Sauce

I know this looks like a plate of veg. It is a plate of veg, but I need to share this with you because it was just too damn tasty!

Plus we all need to diversify and have sides that don’t include cauliflower. So change it up and try this, I promise you won’t be disappointed, unless you don’t like leeks, then you might be.

So here we have charred leaks with a green tahini sauce and a sprinkling of sumac.

Slice your leaks in half lengthwise and add a dry rub of salt, black pepper, paprika and garlic powder. Drizzle over some olive oil and air fry or bake your leaks.

I added the leeks to my Ninja Foodie Aifryer Delux XXL for 7 minutes and it was beautifully golden with some charred bits. I then drizzled over a green tahini sauce and sprinkled over some sumac (think salt bae but with sumac)

For the sauce I added some tahini, lemon juice, salt, pepper, olive oil and plenty of fresh coriander. I then blitz it all in my blender and drizzled it over the leaks.

I had mine with some baked chicken. What would you eat this with?

Charred Leeks with a Green Tahini Sauce


Ingredients

  • 2-3 leeks

  • 1 tbsp of olive oil (or avocado oil)

  • 1/2 tsp of salt

  • 1/4 tsp of black pepper

  • 1/4 tsp of paprika (I like to use smoked paprika)

  • 1/2 tsp of garlic powder

  • 1/4 cup of tahini

  • 3 tsbp of extra virgin olive oil

  • Juice from 1/2 lemon

  • 1 bunch of fresh coriander (about 50g)

  • Salt and pepper to taste

  • A little water if the sauce is too thick

  • Sprinkling of sumac to taste


  1. Cut the leeks into half and then again lengthwise and soak in some salt water to clean.

  2. In the meantime, mix together the salt, pepper, paprika and garlic powder and make a seasoning mix.

  3. Drain the water from the leeks, give it another rinse and put dry with a paper towel.

  4. Drizzle over some olive oil and sprinkle the spice mix over the leeks and coat it will. You do not need to use all of it, adjust according to the size of your leaks and whether you would like a stronger seasoning.

  5. Place the seasoned leeks into your air fryer for about 7 minutes. Alternatively you could bake it in the oven, until golden brown and slightly charred.

  6. For the sauce, add all the remaining ingredients into a blender and blitz on high, until all the ingredients are well combined

  7. If the sauce appears to thick, add a little water and blitz again until you have your desired consistency.

  8. Once your leeks are ready, place on a plate and drizzle over the tahini sauce. Then sprinkle over some sumac for a little extra zing.
