Spicy Courgette Salad

We love going to Korean BBQ restaurants, it’s a great way to get in plenty of satiating proteins and gut healthy fermented veggies without the need to order grains.

A side dish that I absolutely love, is a spicy courgette salad. It’s the perfect accompaniment to the grilled meats. It provides a refreshing yet slightly nutty flavour with a decent kick, when I start, I just cannot get enough.

Spicy Courgette Salad


Ingredients

  • 1 Medium courgette

  • 1 Spring onion

  • 1 tbsp of sesame oil

  • 1 heaped tsp of garlic paste

  • 1 tsp of sweetener (erythritol/monk fruit or allulose)

  • 1 tsp of fish sauce

  • 1/2 tsp of salt

  • 1 tsp of korean red pepper flakes


  1. Cut to courgette into half lengthwise and then slice into thin half moon shapes.

  2. Sprinkle over the salt and let it sit for 5 minutes to let it draw out the water.

  3. Press down on the courgettes between two pieces of kitchen towel to remove the excess water.

  4. Heat the oil in a pan and cook the courgettes on both sides for about 5 minutes until soft.

  5. Add in the remaining ingredients and mix in well.

  6. Allow the salad to cool and then garnish with sesame seeds and spring onion.
